
Smoked Chicken & Sundried Tomato Cream Cheese Parcels

1 Tegel Manuka Smoked Honey Whole Chicken, 1.1kg
150g sundried tomato cream cheese spread
2-3 large courgettes, grated and excess water squeezed out
9 sheets filo pastry
Oil for spraying or brushing

Method
Tear the Tegel Honey Smoked Chicken into bite sized pieces, discarding the skin.
Mix together the chicken, sundried tomato cream cheese spread and grated courgettes.
Place a sheet of filo pastry on a chopping board or clean bench. Brush or spray lightly with oil or melted butter. Cut the filo in half crosswise. Place a spoonful of the mixture at the top of the filo.

Fold the sides of the filo over and roll up to securely enclose the filling. Place seam side down on a baking tray. Brush the top with oil or melted butter. Repeat with remaining filo and filling to make 6 parcels.
Bake at 190˚C for 12-15 minutes or until golden brown.
