
Jamaican Barbecue Chicken

Serves:Ingredients
8 Tegel Lean & Lite Skinless Thigh Fillets
1/4 cup sweet chilli sauce
1/4 cup dark rum
Grated rind and juice of 2 limes
1 tbsp honey
Tomato and Lime Salsa:
2 tomatoes, finely diced
Diced flesh of 2 limes
2 tbsp chopped fresh coriander
2 tbsp olive oil

Method
Toss the thigh fillets with chilli sauce, rum, lime rind and juice and honey. Cover and marinate for 2 hours.
Heat a barbecue and cook over a moderate heat for 15 minutes turning occasionally until the chicken is cooked and golden. Alternatively cook under a preheated grill for 10 to 15 minutes, until fillets are cooked.
Serve Tegel Chicken topped with the tomato and lime salsa. To make the salsa, mix all the ingredients together.
