
Mango Curry Kebab Salad

Serves:Ingredients
1 pack Tegel Ready to Grill Mango Curry Kebabs
Olive oil
1 small iceberg lettuce
1/2 telegraph cucumber, thinly sliced
1 small mango, peeled and sliced from stone or 1 can
Drained mango
1 red pepper, finely sliced with seeds removed
Sprigs of coriander or parsley
Lemon juice dressing:
Juice of 1 lemon
2 tbsp olive oil
Salt and freshly ground black pepper

Method
Heat a grill on high. Place the Tegel Chicken Mango Curry Kebabs on a rack over a grill pan. Grill for 3 to 4 minutes on each side until golden brown. Remove the meat from the skewers.
Break up the lettuce and scatter torn leaves over a salad platter. Scatter with sliced cucumber and mango.
Place the dressing ingredients in a small bowl and whisk to combine, adding salt and pepper to taste. Arrange warm chicken over salad, drizzle with lemon juice dressing, scatter with red pepper and sprigs of coriander or parsley and serve immediately.
