
Chilli & Lime Chicken Bruschetta

1 pack Tegel Ready to Grill Chicken Sweet Chilli and Lime Steaks
1 loaf country bread, sliced
Olive oil
1 clove garlic
Tomato salad:
2 large fresh, ripe tomatoes, finely diced with seeds removed
1 small red onion, finely diced
1/2 cup fresh basil roughly chopped
2 tbsp olive oil
2 tsp red wine vinegar
Freshly ground salt and pepper to taste

Method
Cook the chicken steaks according to the instructions on the pack, slice into strips and set aside.
Brush the bread with olive oil and rub with the peeled clove of garlic. Toast under the oven grill or barbecue and set aside.
Mix together the diced tomatoes, onion and basil. Make a dressing by combining the olive oil, red wine vinegar and salt and pepper. Pour dressing over the tomato mixture and toss well.
Assemble the chicken strips and tomato salad on to the toast just before serving.
