Andre Taber’s Penne with Chicken Bacon & Basil Pesto

400g penne pasta
400g Tegel Jumbo Chicken Bacon
1 tbsp olive oil
4 tbsp basil pesto
Ground black pepper
4 tbsp grated parmesan
400g Tegel Jumbo Chicken Bacon

4 tbsp basil pesto

4 tbsp grated parmesan
Method
Cook the penne pasta according to the instructions on the packet and drain in a colander.
While the pasta is boiling, slice the Chicken Bacon rashers into match-sticks approximately the same length as the penne. Heat the olive oil in a large frying pan over a medium heat and fry the Chicken Bacon match-sticks for 10 minutes until well browned.
Lower the heat and add the cooked and drained pasta and pesto into the frying pan and stir everything to combine and heat through. Add black pepper to taste.
Serve the pasta mixture in bowls. Add a tablespoon of grated parmesan on top of each.
