
Tuscan Smoked Chicken Risoni Salad

Serves:Ingredients
1 cup risoni (rice shaped pasta, sometimes called orzo)
3 medium courgettes, sliced
1 Tegel Manuka Smoked Tuscan Breast, 300g
1/3 cup sundried tomatoes, sliced
1/3 cup toasted pine nuts
3 tbsp torn fresh basil leaves
Dressing:
1/3 cup sun-dried tomato pesto
2 tbsp balsamic vinegar
Salt and freshly ground black pepper

1/3 cup sundried tomatoes, sliced
1/3 cup toasted pine nuts

Dressing:
1/3 cup sun-dried tomato pesto
2 tbsp balsamic vinegar
Salt and freshly ground black pepper
Method
Cook risoni in plenty of boiling, salted water for 10 minutes or until just tender to the bite. Add sliced courgettes to the cooking water and cook for 1 minute more. Drain and rinse with cold water to cool. Drain well and transfer to a large salad bowl.
Slice Tuscan smoked breast meat into bite-sized pieces. Add sliced chicken, sundried tomatoes and pine nuts to the salad bowl.
To make the dressing, whisk ingredients together in a small bowl and season with salt and pepper to taste. Pour dressing over salad and toss well. Serve scattered with basil.
