Shirley Bradstock's Honey Chicken Bacon Salad

Serves:Ingredients
3 rashers Tegel Honey Chicken Bacon
1 ripe mango
1/2 cup toasted cashews (or other nuts as preferred)
1/2 ripe brie cheese
3 cups fresh crisp salad greens
Dressing:
1/3 cup lime juice
2 tbsp water
1/2 cup extra virgin olive oil
1 tbsp prepared mild mustard
Pinch of salt
1 ripe mango
1/2 cup toasted cashews (or other nuts as preferred)
1/2 ripe brie cheese
3 cups fresh crisp salad greens
Dressing:
1/3 cup lime juice
2 tbsp water
1/2 cup extra virgin olive oil
1 tbsp prepared mild mustard
Pinch of salt
Method
Make the dressing by putting all the ingredients into a jar and shaking to mix.
Cut the rashers into strips (1 x 4cm approx) and saute in a little oil until crisp. Drain and set aside.
Peel and cut the mango into pieces and brie into small wedges. Set aside.
To put together, place the salad greens, mango pieces and brie into a large salad bowl and drizzle with the dressing. Toss together to gently coat everything. Scatter the crisped chicken bacon on top and serve.
