Dr. Keast's Chicken BLT

4 slices of Tegel Premium Schnitzel
8 rashers Tegel Chicken Bacon
100g feta cheese, crumbled
4 sprigs fresh oregano, chopped
4 ciabatta buns
4 tbsp mayonnaise
1 cos lettuce, washed and roughly chopped
2 medium tomato's, thickly sliced

Method
Place a frying pan over medium heat (if necessary add some oil), add chicken bacon and fry each side for about 1 minute,set aside.
Add the chicken schnitzel, cook for 1-2 minutes per side (or until cooked through), then remove from pan.
Mix together crumbled feta and chopped oregano. To assemble the sandwich, slice the ciabatta bun in half. On the bottom half place 1 tablespoon mayonnaise, add a layer of lettuce, then Tegel chicken bacon, followed by a layer of tomato, the chicken schnitzel, top feta oregano mix and the remaining ciabatta. Serve immediately.
