Stephen Chaney's Chicken Bacon Panini

Serves:Ingredients
4 panini bread
12 slices Tegel Jumbo Chicken Bacon, grilled until brown
2-3 tomatoes sliced thickly
Approx 50g sundried tomato pesto
8 slices of Always Fresh grilled eggplant
3 courgettes, sliced lengthways, seasoned, oiled and chargrilled

Method
Split the panini and spread one side with sundried tomato pesto.
Season the tomato slices with salt and pepper and layer on panini bread.
Top with the grilled eggplant, grilled courgette and Tegel Chicken Bacon.
Either oven bakeat 180˚C or carefully grill on a low heat on the BBQ to warm through and lightly toast the panini (if you have a cheese topped panini use the oven method)
Embellishments: Include a salad mix or single lettuce such as Cos (add this after grilling or place on the side) and a simple dressing of yoghurt falvoured with lemon, tocreate a more substatial meal.
NOTE: All the ingredients can be prepared ahead orgrilled on the barbie
