
Barbecued Chicken Schnitzel with Coriander, Chilli & Lime

2 tsp olive oil
1 tbsp chopped coriander
1 red chilli, finely chopped
2 tbsp lime juice
1 tsp lime zest
1/2 tsp ground cumin
1 garlic clove, crushed
6 – 8 slices Tegel Lean & Lite Premium Schnitzel

Method
Combine the olive oil, coriander, chilli, lime juice and zest, cumin and garlic. Place the chicken schnitzels in a shallow dish and spoon over the marinade. Cover and refrigerate for 30 minutes.
Cook the Schnitzel on a preheated barbecue for 3 minutes on each side or until they are cooked through.
Serve with a sweet corn, coriander and sweet chilli salsa, crusty bread and a green salad.
