
Chicken Caesar Salad

Ingredients
Caesar Dressing:
2 tsp olive oil
1 clove garlic, crushed
2 anchovies
1/4 cup cream
1 1/2 tablespoons grated parmesan
2 tsp lemon juice
Freshly ground black pepper
Salad:
400g Tegel Lean & Lite Skinless Breast Fillets, sliced
1 tbsp olive oil
1 clove garlic, crushed
4 slices Tegel Chicken Bacon, sliced
2 baby cos lettuce
1 cup croutons
1/4 cup shaved parmesan
Italian parsley to garnish

Salad:
400g Tegel Lean & Lite Skinless Breast Fillets, sliced
1 tbsp olive oil
1 clove garlic, crushed
4 slices Tegel Chicken Bacon, sliced
2 baby cos lettuce
1 cup croutons
1/4 cup shaved parmesan
Italian parsley to garnish
Method
To prepare the dressing, heat the olive oil in a small saucepan or frying pan. Add the garlic and anchovies and cook over low heat for 2 to 3 minutes. Add the cream, parmesan, lemon juice and black pepper. Remove from the heat and set aside to cool.
To prepare the salad, heat the oil in a frying pan. Add the chicken and garlic and cook over high heat until the chicken is golden brown. Remove the chicken from the heat and set aside to cool. Add the chicken bacon to the pan and cook over medium heat until it is golden.
Place the lettuce leaves into a salad bowl or on a platter. Top with the chicken, bacon, croutons and parmesan. Drizzle with the cooled dressing, garnish with Italian parsley then serve immediately.
