
Deli Fresh Garlic Chicken Breasts & Pasta Salad with Pesto Dressing

200g penne
1 pack 280g Tegel Deli-Fresh Roast Garlic Chicken Breasts, sliced
2 cups baby spinach
1 red pepper, sliced
2 medium tomatoes, cut into wedges
150g feta cheese, crumbled
2 spring onions, chopped
1/4 cup chopped Italian parsley
Dressing:
3 tbsp pesto
1/4 cup olive oil
2 tbsp lemon juice
1 tsp honey
Salt and freshly ground black pepper

Dressing:

Method
Cook the penne following the packet directions. Drain, rinse and cool.
Place the penne, sliced chicken, baby spinach, red pepper slices, tomato wedges, feta, spring onions and Italian parsley in a salad bowl.
Drizzle the dressing over the salad and toss gently. Serve immediately.
To prepare the dressing, combine all ingredients.
