
Quick Deli Fresh Sweet Chilli Chicken Red Curry

1 280g pack Tegel Deli-Fresh Sweet Chilli Chicken Tenderloins, sliced
1 tsp oil
2 tbsp red curry paste
1 cup coconut cream
1/4 cup water or chicken stock
100g green beans
1/2 cup drained baby corn
2 tbsp chopped fresh coriander
Lime wedges to garnish

Method
Heat the oil in a frying pan over low heat. Add the red curry paste and stir fry for 1 minute or until fragrant. Add the coconut cream, water or chicken stock and beans and simmer for 2 to 3 minutes. Add the baby corn and chicken and simmer for a further 2 to 3 minutes or until the chicken is heated through. Stir through the coriander. Garnish with lime wedges and serve with rice.
