
Deli Fresh Tex Mex Drumsticks with Mexican Tomatoes, Peppers & Orzo

1 500g pack Tegel Deli-Fresh Tex Mex Drumsticks
2 tbsp olive oil
1 clove garlic, crushed
1 medium onion, chopped
1 red pepper, chopped
1/2 cup chicken stock
1 425g can Mexican tomatoes
1 tbsp tomato paste
Salt and pepper to taste
3/4 cup orzo
1/4 cup chopped fresh coriander or parsley
2 tbsp olive oil

1/2 cup chicken stock
1 425g can Mexican tomatoes
1 tbsp tomato paste
Salt and pepper to taste
3/4 cup orzo
1/4 cup chopped fresh coriander or parsley
Method
Preheat the oven to 180˚C.
Heat the oil in a medium frying pan. Add the garlic, onion and red pepper and cook over medium heat for 2 to 3 minutes. Add the stock, tomatoes and tomato paste. Season to taste with salt and pepper. Simmer for 15 minutes or until the sauce thickens slightly. Meanwhile, cook the orzo following the directions on the packet.
While the tomato mixture and orzo are cooking, place the drumsticks into an oven dish and heat in the preheated oven for 15 minutes.
Drain the orzo and add to the tomato mixture. Cook over low heat, stirring, until it is heated through. Stir in the fresh coriander or parsley.
Serve immediately as an accompaniment to Tex Mex Drumsticks.
