
Ready to Roast Boneless with Asian Pesto

1 Tegel Ready to Roast Boneless Chicken with Creamy Coconut & Spicy Thai Risotto
2 cups coriander leaves (tightly packed)
1/4 tsp fresh ginger
2 tsp sesame oil
1/4 - 1/2 cup olive oil
1 large clove of garlic
1/4 cup toasted cashew nuts
2 tsp lime juice
Salt to taste

Method
Cook Tegel Ready to Roast Boneless Chicken according to packet instructions.
In a food processor combine coriander, garlic, ginger, cashew nuts, sesame oil and lime juice. Gradually add olive oil and process until well blended. Season with salt to taste.
Slice chicken and serve with Asian pesto and salad. If the pesto is too thick thin with extra olive oil.
