
Tender Basted Grilled Chicken with Stir Fried Rice & Vegetables

4 Tegel Tender Basted Breast Fillets
4 large flat mushrooms (or 16 button mushrooms halved)
1 tsp oil
2 cloves garlic, crushed
2 tsp freshly grated ginger
2 carrots, finely sliced
2 courgettes, finely sliced
2 red peppers, finely sliced
2 cups cooked long grain rice
1/2 cup chicken stock, hot
4 large flat mushrooms (or 16 button mushrooms halved)

2 courgettes, finely sliced
2 red peppers, finely sliced
2 cups cooked long grain rice
1/2 cup chicken stock, hot
Method
Heat a grill pan or oven grill to hot. Place the chicken on or under the grill, and cook for 5 - 7 minutes each side until cooked through.
Take off the heat and rest for 5 minutes. At the same time, cook the mushrooms on or under the grill and for 2 - 3 minutes each side.
Slice the chicken and mushrooms into 1cm strips.
Heat the oil in a wok and stir-fry the garlic, ginger, carrots, courgettes and peppers for 2 minutes.
Add the rice and stock and stirfry for 2 - 3 minutes until hot.
Add the chicken and mushrooms, stir through to heat and serve.
