
Chicken & Plum Stir Fry

Serves:Ingredients
400g Tegel Lean & Lite Skinless Breast Fillets
A dash of oil
1 tsp minced garlic
1 tsp minced ginger
3-4 cups fresh vegetables (sliced to stir fry size)
1 cup plum sauce
1/4 cup water
Cashew nuts to garnish

Method
Heat a dash of oil in a frying pan or wok. Add the garlic, ginger and vegetables, stir-frying over med/high heat for 2-3 mintues. Set aside.
Add another dash of oil to the wok and stirfry breast strips for 4-5 minutes over high heat until cooked. Return the vegetables to the pan.
Mix together plum sauce and water and pour over the stir fry. Stir until heated through.
Serve on rice and garnish with toasted cashew nuts.
