
Chicken Bacon for Brunch

380g pack Tegel Chicken Bacon
1 large tomato, thickly sliced
1 cup spinach, washed, roughly chopped, and wilted
2 eggs, poached
2-4 slices bread, toasted
Hollandaise sauce, optional

Method
Heat a large non-stick frying pan or sandwich press. Lightly sear the chicken bacon for a few minutes each side. Brown the tomato slices for a minute on each side.
Top the toast with spinach and tomato, add the poached egg, and pile on the Chicken Bacon Rashers.
