
Crumbed Chicken Schnitzel with Tomato Salsa

Serves:Ingredients
1 cup dried breadcrumbs
1/2 cup finely grated parmesan cheese
2 tbsp chopped parsley
1 cup flour
2 eggs, beaten
2 tbsp oil
4 slices of Tegel Lean & Lite Premium Schnitzel
Salsa:
2 tomatoes, finely chopped
1 small red onion, finely chopped
1 roasted red pepper, finely chopped
1 tbsp chopped parsley
1 tbsp lemon juice
2 tbsp olive oil
1/2 cup finely grated parmesan cheese
2 tbsp chopped parsley
1 cup flour

Salsa:
2 tomatoes, finely chopped
1 small red onion, finely chopped
1 roasted red pepper, finely chopped
1 tbsp chopped parsley
1 tbsp lemon juice
2 tbsp olive oil
Method
Combine breadcrumbs, parmesan and parsley on a plate.Dip the schnitzel into the flour, then the beaten egg, then the crumb mixture.
Heat oil in a frying pan and cook the schnitzel over medium heat for 2-3 minutes on each side, or until golden brown and cooked through.
To prepare the salsa, combine all ingredients.
