Orange Glazed Chicken

1 Tegel Size 20 Whole Bagged Chicken, fresh
1/2 cup orange juice
1/2 cup brown sugar
1/2 cup sherry, rice wine (or more orange juice)
1 tsp dry mustard or 5 spice powder
1/2 cup orange juice

Method
Combine all the glaze ingredients in a small saucepan and bring to the boil. Reduce to a steady simmer and cook until reduced by half, about 10 minutes.
Brush a third of the glaze over the chicken and roast following cooking instructions, basting the chicken with the remaining glaze twice during cooking.
