
Crunchy Pesto Chicken

4-6 tbsp basil pesto
6-8 Tegel Mixed Chicken Portions
1/2 cup milk
1 cup dried breadcrumbs
Salt and pepper to taste
Spray oil

Method
Stuff a little of the pesto under the skin of each piece of chicken. Dip in milk, then in breadcrumbs seasoned with the salt and pepper. Place on an oiled oven tray. Spray the chicken lightly with oil.
Preheat the fan grill to 200˚C and fan grill for 10 minutes.
Turn the pieces over, sprinkle with a few more crumbs if required and lightly spray with oil. Continue grilled for 12-15 minutes or until the chicken is cooked. Great served with a light salad with olives and tomatoes.
