Smoked Chicken & Roasted Red Pepper Panini

Ingredients
400g Tegel Manuka Smoked Tuscan Breast 300g, sliced

8 panini bread
1/2 cup red pepper relish or chutney
2 roasted red peppers, sliced
1 cup baby spinach or rocket leaves
1 1/2 cups grated cheese
Sour cream to serve
Method

Slice the panini in half lengthwise. Spread one half of each panini with relish or chutney, smoked chicken slices, red pepper slices, baby spinach or rocket and grated cheese.

Place the panini two at a time on a sandwich press, or in a lightly oiled frying pan over medium heat. Cook for 2 to 3 minutes or until the bottom of the panini is golden. Turn and cook on the other side for a further 2 to 3 minutes.

Serve with sour cream.
