Chicken Sausage, Potato & Rosemary Bake

Ingredients
3 tbsp olive oil
600g agria potatoes, cut into wedges
1 red onion, cut into wedges
3 cloves garlic, sliced
1 tbsp rosemary sprigs
Salt and freshly ground black pepper
8 Tegel Pre-Cooked Chicken Sausages, cut in half lengthwise
1 punnet cherry tomatoes
1/4 cup chopped basil or parsley
Method

Preheat the oven to 200°C.

Place the olive oil, potatoes, red onion, garlic and rosemary into an oven dish. Season with salt and pepper. Bake in the oven for 15 to 20 minutes. Add the halved sausages and cook for a further 20 minutes or until the potatoes and sausages are golden. Add the cherry tomatoes and cook for further few minutes until the tomatoes are just beginning to soften.

Garnish with the basil or parsley and serve immediately.
