Mouth-watering Stuffed Turkey

Mouth-watering Stuffed Turkey breast fillet roasted with red-pepper, ricotta and basil.

Ingredients
1 packet (300 to 400 g) Tegel Turkey Breast fillets
½ roasted red pepper, cut into strips
3 tablespoons ricotta
fresh basil leaves
1 tablespoon olive oil
½ cup chicken stock
Method

Preheat the oven to 200°C.

Use a sharp knife to cut a deep pocket in the turkey breast fillet. Place the red pepper, ricotta and basil leaves into the pocket and secure the opening with toothpicks.

Heat the oil in a non stick frying pan over medium high heat. Brown the turkey on both sides. Transfer the turkey to an oven proof dish, pour over the chicken stock and cover with foil. Bake in the preheated oven for 25 to 35 minutes or until the turkey is cooked.

To serve, slice the turkey and drizzle with the chicken stock.

Tip: Serve with a mixture of green vegetables such as asparagus, spinach and broad beans and garnish with toasted pinenuts
