Mediterranean Wild Rice Stuffing









Makes 3 Cups
Serves:Ingredients
3/4 cup long grain white rice
1/4 cup wild rice
1/4 cup black olives, pitted & chopped
1/4 cup sundried tomatoes, chopped
1/2 cup feta, chopped
1/2 cup roasted red or yellow capsicum, seeded, skinned & chopped
1 tbsp olive oil
Freshly ground black pepper
2 tbsp verjuice* (optional)
1/4 cup wild rice
1/4 cup black olives, pitted & chopped

Freshly ground black pepper
2 tbsp verjuice* (optional)
Method
Cook the white rice and wild rice together with 1 1/2 cups of water for 13 minutes in the microwave. Cover and let stand to absorb the remaining moisture.
Mix through the prepared olives, tomatoes, feta, and capsicum.
In a separate container, mix together the olive oil, verjuice and pepper to form a vinaigrette. Add the vinaigrette to the rice mixture gradually, mixing well to ensure an even distribution.
Spoon the stuffing into the turkey or chicken cavity and cook as per the cooking instructions on the poultry pack.
* Verjuice is an acidic unfermented juice made from the pressing of unripe grapes and can be found in the vinegar section of most supermarkets and specialty stores.
