
Warm Chicken Bacon & Potato Salad

Serves:Ingredients
500g baby potatoes, scrubbed and cut in half
4 rashers Tegel Chicken Bacon
150g green beans
2 spring onions, sliced
2 tbsp fresh mint leaves
2 tbsp parsley leaves
Dressing:
1/2 cup mayonnaise
1/4 cup sour cream
2 tbsp lemon juice
2 tsp grainy mustard

Method
Boil the potatoes until tender. While the potatoes are cooking, grill the chicken bacon until crisp and cut into pieces.
Blanch the beans in boiling water for 2 minutes.
Place the warm potatoes, chicken bacon, beans and spring onions into a salad bowl or platter. Top with the dressing and garnish with mint and parsley.
To prepare the dressing, combine all ingredients. Serve immediately.
