Jamaican Jerk Chunky Tenders with Zesty Lime and Pineapple Salsa

Ingredients:

Tegel Fresh Chunky Jamaican Jerk Tenders 4 Pieces

2 x Tegel Jamaican Jerk tenders

Spray oil

½ fresh pineapple,

2 Limes, zest and juice

½ red onion

1 red capsicum

2 tablespoons sweet chilli sauce

Small bunch mint, finely shredded  

3-4 cups Colourful slaw and mixed summer greens

8 Seared tortillas

Method:

Lightly spray the tenders with oil and grill, BBQ or oven bake until golden and cooked through.

For the salsa, remove skin from pineapple and cut into slices then very finely dice, combine with the zest and juice of the limes the diced red onion and capsicum and then toss with the sweet chilli and mint.

Sear the tortillas until coloured and warm and serve with the salsa and tasty tenders.
