- Tegel Free Range Meal Maker Sliced Smoked Chicken 260g
- 2 cups orzo
- 1 lemon, zested & sliced into rounds
- 3 cups hot chicken stock
- 1 cup cream
- 2 cups chopped spinach
- 1 cup frozen peas, defrosted
- 1/3 cup grated parmesan
- Extra parmesan & lemon zest to serve
Method:
- Pre-heat oven to 190°C fan bake.
- Add the orzo, smoked chicken, lemon zest, lemon slices, chicken stock and cream to a medium sized baking dish. Season generously with salt and pepper, then mix to combine. Place in the oven uncovered to bake for 30 – 35 minutes.
- Remove from the oven, stir through the chopped spinach, peas and parmesan and place back in the oven for 5 minutes, until warmed through.
- Let sit for 5 minutes before serving to allow the sauce to thicken. Serve with an extra sprinkle of parmesan & grating of lemon zest.
